SOUPS: For low fat and low cholestrol diets, we suggest boiling the ham bone first and let it sit in refrigerator until the fat floats to surface. Skim fat off before using broth.



GOLDEN BAKED HAMŪ MIXED BEAN SOUP

  • 1 "Bag of Beans" (soak overnight in cold water)
  • 1 chopped onion
  • 1 can tomatoes
  • 1 GOLDEN BAKED HAM® "SOUP BONE"
  • salt and pepper to taste
  • 1½ qt water

Put all ingredients in crockpot and cover with water. Simmer 5 hours on high setting, covered. Will need to add water.
Serve with corn bread.




GOLDEN BAKED HAM® PEA OR LENTIL SOUP

  • 1 bag split peas or lentils
  • 1 lb. sliced carrots
  • 1 large onion. chopped
  • 1 cup celery. chopped
  • salt & pepper to taste
  • 1½ qts. water
  • 1 GOLDEN BAKED HAM® "SOUP BONE"

Place all ingredients together in 5 qt. crockpot. Simmer all day on high setting. Note: May need more water.



RAISIN SAUCE

  • 1½ cups firmly packed brown sugar
  • 1½ tablespoons all purpose flour
  • 1½ teaspoons dry mustard
  • 1½ cups water
  • ½ cup golden raisins

Combine all ingredients. Stir well. Cook over low heat, stirring constantly until thick.
Serve warm over GOLDEN BAKED HAMS®.
Yield 2-1/3 cups sauce.



GOLDEN BAKED HAM® DINNER CASSEROLE

  • ¾ cup light cream cheese
  • ¾ cup 1% milk
  • 1/3 cup GOLDEN BAKED HAM® mustard
  • 2 cups cooked fettucini pasta (4 oz. uncooked)
  • 2 cups cubed GOLDEN BAKED HAM®
  • ½ cup chopped tomatoes
  • ½ cup frozen peas, thawed
  • 2 tablespoons minced parsley

In large saucepan combine cream cheese and milk; cook over low heat, stirring until smooth. Stir in mustard and Parmesan cheese. Do not boil. Add remaining ingredients. Cook over low heat, stirring, until mixture is heated through about 5 minutes.

Makes 4 servings. Serve with green salad for delicious one-dish meal.



HAM SALAD CROISSANTS

  • 1 pkg. refrigerated, crescent dinner rolls
  • 1 tablespoon prepared mustard
  • ½ lb. GOLDEN BAKED HAM® SALAD (ground ham, mayonnaise, pickle relish)
  • ¼ cup shredded Cheddar Cheese

Unroll dinner rolls: cut each one in half to form a small triangle. Spread a little mustard on each triangle. Place ½ teaspoon GOLDEN BAKED HAM® SALAD and a small amount of cheese near the longest side of each triangle. Roll up. Place seam side down on ungreased baking sheet. Bake in 375º oven 11 to 13 minutes until golden brown. Yield 16 appetizer servings.



GOLDEN BAKED HAM®-CHEESE BALL

  • ¾ lb. ground GOLDEN BAKED HAM®
  • 1 8 oz. pkg softened cream cheese
  • 1 tsp. Worcestershire sauce
  • 1 cup finely shredded sharp cheese
  • 1 tsp. minced onion
  • 3 drops tobasco sauce

Combine all ingredients. Shape into balls and roll in finely chopped pecans. Chill. Serve with crackers.

Make extra balls and freeze.



GOLDEN BAKED HAM® BREAKFAST CASSEROLE

  • 6 eggs
  • 8 slices bread
  • 8 slices velveta cheese
  • 2 cups diced GOLDEN BAKED HAM®
  • 1 can cream of mushroom soup - add milk to make three cups
  • ½ tsp. mustard

Layer bread, cheese, ham. Pour mixture of eggs, soup, milk over layers. Let see overnight. Bake at 325 for 1 hour. Sprinkle with parmesan cheese. Will serve 6 people.
For a luncheon casserole, add 1 10 oz. pkg. chopped broccoli



HEARTY MACARONI SALAD

  • 1 cup uncooked elbow macaroni
  • ¾ lb. GOLEN BAKED HAM® cut into strips
  • 1½ cups diced sharp cheddar cheese
  • 1 cup chopped celery
  • ½ cup chopped onion
  • ½ cup chopped sweet pickle
  • ½ cup commercial sour cream
  • 2 tbls. prepared mustard
  • celery leaves optional

Cook macaroni according to pkg; drain. Rince with cold water; drain well. Combine macaroni and next 7 ingredients. Toss gently. Garnish with celery leaves. Yield 6 servings.



HAM PATTIES

  • 1 lb. GOLDEN BAKED HAM® (GROUND)
  • 2 tsp.GOLDEN BAKED ® HONEY MUSTARD
  • 2 tsp. finely chopped onions
  • ¼ cup cracker crumbs
  • 1 egg
  • 2 tablespoons barbeque sauce (optional)
  • Mix together
  • Make thin round patties (Makes 12)
  • Fry slowly in vegetable oil

Serve with dallop of sour cream for something different.
